1 lb. ground beef
1 onion, chopped
1 can evaporated milk
2 small cans or 1 large can cream of mushroom soup
salt and pepper to taste
1 bag tator tots
Preheat oven to 350 degrees. Brown ground beef and onion until onion is transluscent and meat is no longer pink. Drain off any grease. Add milk, soup, salt and pepper. Cook until bubbley. Pour tator tots into a 9X13 baking dish. Pour meat mixture over tator tots. Bake in oven uncovered for 30 minutes until tator tots look golden and are cooked through.
**Regular milk can be substituted for the evaporated milk and sometimes I add grated cheese to the top of the casserole for the last few minutes of baking***
YUMMY!!! This is one of our family favorites...I even add some frozen veggies- makes it a one-pan-meal.

I've made a similar casserole in the past where we shredded fresh potatoes and mixed it in with the rest. We called is "Hash-erole." My son cannot eat processed foods, so sadly we can no longer eat these types of comfort foods.
